Thai Roast Duck Curry


– 1/2 roasted duck, deboned and meat chopped
– 2 tbs red curry paste
– 1/2 cup coconut cream
– 1 1/2 cups thin coconut milk
– 1 large tomato, cut into wedges
– 1/2 cup seedless grapes
– 1 small eggplant, chopped
– 3 kaffir lime leaves
– 2 tbs fish sauce
– 1 tsp sugar
– 1/2 tsp salt


– Place cream in a saucepan and heat over medium heat.

– Add curry paste, stirring well.

– Add duck and stir well then add milk and all remaining ingredients.

– Bring to a boil then remove from heat and serve.
